Denim vs Twill for Workwear
Both are twills. The question is really indigo versus piece-dyed, and how much abrasion the garment will take.
Short answer
Use denim when the workwear is sold on looking like denim. Use bull denim or heavy twill when it has to survive, hold colour and not fade at the creases.
